Bowl de légumes rôtis et boulgour

Comment préparer

Préchauffer le four à 210°C.

Laver tous les légumes et peler la betterave.

Détailler les légumes: les carottes et les courgettes en rondelles, le brocoli en fleurettes, le tronc du brocoli en bâtonnets et la betterave en petits dés d’environ un centimètre.

Dans un plat allant au four type lèche-frites, placer les légumes et les mélanger avec l’huile d’olive, les épices et le sel.

Enfourner pour 30 minutes. Vous obtiendrez des légumes encore croquants. Pour un résultat plus fondant, ajouter 10-15 minutes de cuisson. Mélanger entre temps.

Tester la cuisson des légumes avec la pointe d’un couteau.

Pendant ce temps, cuire le boulgour selon les instructions du paquet.

Cuire l’oeuf pendant 9 minutes pour un résultat bien cuit ou 6 minutes si vous préférez un oeuf mollet.

Faire sauter les pimientos del padron à la poêle avec un peu d’huile d’olive pendant 10 minutes à feu moyen.

Enfin, réaliser la sauce en mélangeant le joghurt et la sauce à salade HUGO.

Pour le dressage, placer le boulgour au fond de l’assiette et parsemer de légumes.

Ajouter l’oeuf coupé en deux et napper de sauce.

Servir tiède.

Petite astuce

Cette recette se prête très bien au batch cooking, conservez toutefois la sauce dans un contenant à part, afin qu’elle ne soit pas absorbée par le boulgour.
